How about salsify? It’s also known as oyster plant or vegetable oyster, and it has a unique flavor. There’s also sunchokes – roots that are part of the sunflower family. String Bean

String beans are very good for you. They look similar to green beans and can be used in lots of recipes in place of them. String beans are good fresh or frozen or canned. String beans go well with potatoes or pasta dishes, or just eaten by themselves as a healthy snack choice.

Choose string beans that are bright green and crisp with a glossy coat. When purchasing string beans, look for those that feel heavy for their size because this is a sign of freshness.

Sprouts

Choose sprouts that are smallish and have a light green hue to them. They will be soft at first when you purchase them but should firm up in about a week’s time. It’s okay if the sprouts are a little brown at this point; it just means they’re fresh and full of nutrients! Store sprouts in the refrigerator after purchasing so that they stay fresh as possible.

Sorrel

Sorrel is a good source of dietary fiber. Unlike spinach, sorrel is crisp and juicy, not slimy, which makes it an ideal addition to salads.

When buying sorrel, look for bright green leaves with bright green stems and no blemishes or mushiness in the stems. It is best to keep it fresh in the refrigerator, so it can be enjoyed for up to one week after purchase.

Spaghetti Squash

What is it? Spaghetti squash, or zucchini, is a squash that looks like spaghetti. You can bake or boil it to eat as a side dish and you can use it in some recipes such as tomato sauce, soup, or casseroles. You can also sauté it with onions, garlic and spices for a quick meal.

It does not have to be boiled for about an hour and then baked in the oven for about an hour; you can just cut a small slice and microwave on high for about seven minutes. Be sure to watch it so that it doesn’t get too mushy! Cook until no more water comes out of the squash when squeezed, but don’t overcook.

Serrano Pepper

Is a hot, green pepper that is ready to harvest when the seeds reach full maturity, or the top of the pepper green splits open.

The stems are often long and narrow, which make it look like it is seeing-eye dog. And serrano peppers make great snacks when you cut them in half and roast them in a hot oven. You can also add fresh or dried serrano’s to soups or sauces as a tasty addition.

Sissoo Spinach

Sissoo is a variety of spinach with leaves that are succulent and tender, as opposed to the more common varieties with broad leaf. It has a rich soft texture that makes it perfect for eating raw.

It’s very good in salads, soups and stews, and pasta. Don’t over cook it because it will become too tough!

Samphire

Samphire is good for you and it’s delicious, too! It’s best eaten raw, and is great in salads.

It is also a good camping food to have by your side. You can dip it in tahini and eat it like chips.

Santorini Tomato

Santorini tomatoes can be eaten as a fruit or used to make tomato sauce, pasta sauce and others. They have a very sweet flavor and are excellent for cooking. This is the first selection of tomatoes I choose to grow in my garden.

It is used in salads, sandwiches, and sauces. I use it year round and even make tomato soup with it. I also find that Santorini tomatoes are great for pies and in some recipes where you’re looking for a sweeter taste.

Soko is the name for a rich, herbaceous-flavored green that grows like a weed around the world. It has a somewhat mild flavor and cooks up into a nice kale-type green.

Soko is considered to be more of an annual vegetable and can be found in most supermarkets year round, as well as some farmers markets, nurseries and plant exchanges. It is used in salads, sandwiches, and sauces. You can also put it in soups and stews.

Salsify

Salsify is a sweet, creamy tasting, root vegetable that is good for you and tastes a bit like oysters. It comes from the same family as the dandelion plant.

Salsify is great steamed with butter or mashed with potatoes and served with gravy. It can also be fried and eaten as a side dish. Salsify has been used by humans for thousands of years and it was one of the main staples of our ancestor’s diet!

Scallions

Scallions taste best when you pick them up from your own garden. If you can’t grow your own scallions, then I suggest that you buy them at a farmer’s market with direct contact with the farmer or at the grocery store.

If you live in colder climates, it is best to store your scallions in dry peat moss in a plastic bag inside a cool place so that they last longer. Wash them before use and trim off the bottoms of each scallion if they have started to turn brown.

Sea Kale

Sea kale has a nutty flavor that some people find deliciously sweet, others find a little too sharp. Regardless of your opinion, sea kale is tasty and nutritious. Sea kale is a very healthy addition to soups and salads.

You can either eat these raw or cook them in a recipe. Shallots have been considered “invisible” for thousands of years. They were related to the onion, and some people used them because of this relationship.
