Jalapeno

Jerusalem artichoke

This tuberous vegetable can be used in salads and stews. They also make a great substitute for potatoes. It is found in most supermarkets and produces sections. It is rich in potassium, magnesium, phosphorus, and iron.

Jicama

This vegetable is grown mostly in Mexico and South America but it can also be purchased here in America at your local produce store. It is a large tuberous root that is white on the outside and light brown on the inside when it is cooked.

This is a root vegetable that typically has many bumps and ridges when sliced. It can be eaten raw in salads and makes an excellent alternative to chips.

Japanese eggplant

A member of the “Capsicum” family – this vegetable can be found in most supermarkets. It is best used in stir-fries and other types of cooking. It is meaty, but also delicate – so it can be cut into smaller pieces if you don’t have a lot of room available to cook it in a pot or skillet. The Japanese eggplant has green skin, white flesh, and an edible stem.
