History

The company was the creation of Nordahl Brue and Mike Dressell. The pair opened their first store in Troy, New York in 1983, they had thought where better to open this chain than the home of the legendary New York bagel. They spent two and a half years working with a professional bagel baker to develop their fabulous product.

The way their bagels are made can be traced back to the same processes that were used from the early 1900’s.  After making the dough, each batch is kettle boiled to ensure they’re crispy on the outside but soft and chewy on the inside. They’re then baked in a stone-hearth oven in small batches, to guarantee they’re fresh all day.

Over the years the company has gone through various changes in ownership. In 2003 the brand was purchased by James J Greco and Sun Capital Partners. In 2011 there was another change and the company is currently owned by ‘Group Le Duff’. This French company has plans to ‘frenchify’ the chain and will combine some stores with their Brioche Doree chain.

They have over 280 locations across 23 states, as well as locations in Canada and the District of Colombia. Plus, they opened their first European location in Rennes, France, in 2013. They also hold a Guinness world record for the world’s largest bagel. Their commitment to ‘time honored tradition’ has guaranteed the superior quality of their bagels for over 35 years.
