There are so many amazing veggies that start with the letter Z, it’s hard to figure out where to even begin! We could talk about zucchini or zinnia plants. But those are too easy.

Zucchini

Zucchini is a summer squash. It can be eaten raw or cooked. It goes well in soups, casseroles, and stir-fries. It is also great grilled or broiled with a little olive oil and salt and pepper. It is one of my favorite summer vegetables.

When buying zucchini look for ones that are firm with no soft spots or bruises. Store in the refrigerator after cutting. Zucchini can be frozen but only for a few weeks.

Zebra Eggplant

Zebra is a type of eggplant that has dark green stripes alternating with purple and white. It is used in stir-fries, casseroles, pasta dishes, and sandwiches. It’s firm and meaty with little seeds inside. It can be grilled or broiled or roasted on a baking sheet.

When buying zebra eggplant look for eggplants that have hard, glossy skin without any soft spots. Zebra eggplants should feel heavy in relation to their size. They store well in the refrigerator for up to a week after cutting them from the stem end of the vegetable with a sharp knife. Zebra eggplant can be frozen but only for two to three weeks at most.

Zizania Latifolia

This is a type of edible weed. It grows most often in the ground or along the sides of roads and highways. It is not bitter tasting so it can be eaten raw or cooked up in salads and soups.

It is found in Asia, Africa, and Europe.

It grows from April to June in the summer. It is also called “wild rice” even though it’s not related to the regular grain rice. The best way to eat it is by breaking off a few leaves and stems at a time. Then chew the leaves like spinach or kale before eating the stems with a broth or wet sauce.
