History

This chain started after a seemingly ordinary vacation to Cabo San Lucas, Mexico. This coastal town is on the south point of Mexico’s Baja California peninsula and is well known for its delicious cuisine, beautiful beaches and amazing sea and surf. After visiting this magnificent region, JD and Sarah Gardner starting dreaming of a way to bring the magic of Mexico back home.

This is where the idea for Costa Vida was born, as the pair watched the sun go down, they decided that the best way to do this would be to open a Tex-Mex restaurant. The first restaurant was opened in Layton, Utah in 2003 and was an instant success.

The focus in Mexico had been on freshness and this is something that is replicated in all of their locations. Even their tortillas are made from scratch, every day, ensuring customers only receive the freshest food. The menu is designed by a certified executive chef to ensure that all of the food is full of flavor.

The company has been voted one of the fastest growing franchises in North America and now have over 70 company owned and franchised locations across the US and Canada. They are continuing to grow, but each location remains true to the vision of the founders, providing fresh, flavorful, Mexican cuisine. 

Review

When you enter any of Costa Vida locations, you’ll feel like you have been transported to a seaside destination. The chairs are a mix and match of nautical colors, providing plenty of seating for the whole family. The wooden paneling, graphic printed walls and warm lighting further serve the chain’s tropical theme.

Costa Vida provide an extensive menu that consists of every single Mexican dish you could possibly think of. They offer: burritos, tacos, nachos, enchiladas, quesadillas, salads, appetizers, specialties, desserts and kids meals, as well as a range of beverages. With each of their main features you’ll be asked to select your filing: shredded beef, sweet pork, grilled chicken, grilled steak, bean and cheese or their delightful raspberry chipotle chicken.

One of their most highly recommended items is their burritos, with grilled steak being a popular choice. The burrito is stuffed with the grilled steak (or whichever meat you decide on), lime rice, a choice of beans, grated cheese and fresh greens, then covered with more cheese and sauce.

The staff are as good as the food and they aim to make your visit into a mini-vacation with friendly smiles and a welcoming, professional attitude. The prices are slightly higher than other chains with any main dish costing between $6 to $9.
