History
It was founded in 1996 by Larry Leith, who wanted to return to Colorado — not to the ski industry, but via a health-centric, affordable restaurant with quick service.
From its humble beginnings, this joint now has 20 restaurants in key locations. It’s also set to expand with another branch soon.
Review
The restaurant itself is spacious. It also has this lovely wooden theme with dark colors, reminiscent of the old interior architecture in Japan.
Tokyo Joe’s serves the freshest meals I’ve eaten so far in contrast to similar fast-casual restaurants. And like the Japanese themselves, they prepare each meal with care.
You should try the yakitori bowl and bento box. Both are tasty and filling. Another thing I liked was the Build-Your-Own-Bowls option which lets you make your own rice bowl.
The staff was attentive and gave suggestions to help diners in choosing meals. Another great thing was that I was able to get a table quickly despite the long line.
