History

The idea for this company started long before the first store came in to existence. Drew Harré a young man from New Zealand was living in Paris and he was on the hunt for the perfect sandwich.  After searching high and low, without success, he decided he would have to create his own.

Shortly after this he travelled to Italy whereby in Rome he came across an old bakery where two brothers created flatbread from scratch every day. The recipe for the bread goes back to Roman times and Harré spent months with the pair perfecting the recipe and baking technique. Each and every Cosi has an Italian style hearth oven, to ensure the bread is just as delicious as the brothers intended.

It was shortly after this, in 1989, that he returned to Paris and opened the first ever Cosi restaurant. The concept behind the brand was simple: fast, simple, delicious, hearty food. All the dishes have a distinctly worldwide theme and are inspired by Harré’s travels around the globe.

The brand took off once it began opening stores in the US, with the first location being opened in New York in 1996. Nowadays there are over 100 Cosi restaurants located all across the US, Costa Rica and the United Arab Emirates. Each new location has remained true to Harré’s original vision and continue to provide high quality, delicious products.

When you arrive at any Cosi location, you’ll feel as if you’re stepping inside the original Parisian store. They are decorated in a particularly French chic manner, with burnt red hues decorating the walls, modern lighting and clean, streamlined service areas. Plus, a range of delicate table and chairs, relaxing sofas and armchairs and some locations have outdoor seating available.

When it comes to Cosi ‘s flatbread sandwiches they have some fantastic choices: t.b.m (tomato, basil, mozzarella), chicken t.b.m, turkey avocado, Tuscan pesto chicken, pork belly banh-mi. If you’re thinking about a melt there’s: steakhouse gorgonzola melt, pesto chicken melt and these are only half of their incredible offerings. One of the most popular is their buffalo bleu flatbread sandwich: chicken, buffalo sauce, chopped romaine and blue cheese spread, a mouthwatering combination.
